8 tsp, 20 grams flaxmeal
3 Tbs warm water
2 Tbs blue or amber agave
1 tsp vanilla extract
1/4 cup whole wheat flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 cups nuts, 200 grams (I used mixed raw nuts)
1 1/4 cups dried fruit, 175 grams ( I used dried cranberries and currants)
8 dried figs, 50 grams (or dates)
4 Tbs carob chips (nondairy, I use Chatfield's)
cooking spray


How Do I Make Vegan Energy Bars?

Here is how you make Vegan Energy Bars:

Spray an 8x8 nonstick baking pan with cooking spray and set aside. Preheat oven to 350.Mix flaxmeal with warm water in small bowl. Stir in agave and vanilla extract, set aside. Stir together dry ingredients, whole wheat flour through salt and set aside. Chop dried fruit, nuts, and carob chips. I use a food processor to chop each ingredient seperately. You can also do this with a knife but it takes a bit more time. Combine all chopped ingredients in a large bowl. Add dry ingredients to the berry/nut mixture and stir to combine. Then add in wet ingredients and stir until well combined. Spoon mixture into sprayed baking pan and press down firmly and evenly. Bake uncovered for apprx 25 minutes at 350 degrees F. If they are browning too much, lightly cover with a piece of foil during last 10 minutes of cooking. Let sit in pan for a few minutes then remove and place on cooling rack. Run a knife around edge of pan to losen. Once cool, cut into 16 bars. I store the leftovers in the fridge or freezer to keep fresh.
