What Are The Ingredients For Vegetarian Epanadas Recipe?The ingredients for Vegetarian Epanadas are: 2 Tbs oil (canola, olive, or otherwise)Two packages Pepperidge Farm Puff Pastry Sheet 1 package (12 oz) Quorn ground "beef" 1 red bell pepper, finely chopped 5 green onions, finely chopped 1 tsp. cumin 1 Tbs. chili Powder salt and pepper, to taste 1/2 - 1 cup salsa (to taste) 2 cups rinsed black beans 1 cup shredded cheddar or pepper jack cheese bunch fresh cilantro How Do I Make Vegetarian Epanadas?Here is how you make Vegetarian Epanadas: Thaw the pastry sheet according to the package.Preheat the oven to 375 degrees.Heat the oil in a large skillet.When heated, add the Quorn meatless ground beef, and heat, stirring to coat.Add the onions and peppers, and cook until tender (a few minutes). You may need to add a little more oil, but keep it light!When tender, add the tomato sauce, spices and salsa, and stir. Keep on low heat for a few minutes until well blended.Remove from heat, add beans, cheese and cilantro, and mix thoroughly.Roll one of the pastry sheets out into about a 16x12 inch piece. I used a large jar lid to cut out circles about 4 -5 inches in diameter. In each circle, place a heaping tablespoon of the bean/cheese on one half of the circle. Fold the other half over, and use the tines of a fork to crimp the edges. Repeat for all the pastry and filling. You may need to re-roll out some of the dough.Place each half-moon on cookie-sheets sprayed with vegetable oil.
