1/8th of a teaspoon of orange zest

3 cups of whole wheat flour


How Do I Make Whole Wheat Fig Newtons?

Here is how you make Whole Wheat Fig Newtons:

Filling: Combine the figs, orange juice, orange zest, honey and water into a pan and boil gently for approximately 1 to 2 hours, when the liquid gets absorbed and before it burns take it off the heat. Let it cool. Then grind it in a food processor until it is paste like. Cookie: Cream together the softened butter, sugar, zest and vanilla. Add eggs, combine. Add the whole wheat flour 1/2 cup at a time, mixing thoroughly, until it is well combined. You may have to mix the last of it with your hands. Wrap the cookie dough in plastic wrap and let chill in the refrigerator for an hour, to make it easier to handle. When it is ready to be worked, roll the dough out on a floured board into a circle and divide into 4 equal triangles. Make a log of each piece and then roll flat to make 4 long rectangles about 1/8th to 1/4th inch thick. (more towards 1/8th) Then spread your fig paste on the center of each rectangle with 1/4th of an inch of cookie sticking out on each side of the filling. Fold the edges of the cookie dough up and over the filling towards the center of the rectangle, so the edges of the cookie dough meet over the filling. Press to seal. Cut each rectangle log into 7 or so pieces, placing seam side down on a cookie sheet covered with parchment paper. Bake at 350 for 15 minutes or until the cookies turn golden. Let cook completely and put into an air tight container. Good for about 2 weeks. Serving Size:?makes approximately 56 cookies
