When you make wings, accumulate the tips over time in a large freezer ziploc bag. I find the wing tips have alot of bone for great stock-making, and great chicken flavor. If you deviate from the wing tips, you're on your own and will have to experiment with other parts combinations. Always break the bones if possible to get the "goodies" out of the bones and into your stock pot!. Also, I think the nutritional info is BOGUS for this recipe. All of the solids are thrown out, and all (90%) of the fat is skimmed off. Most commercial stocks are about 30 calories or LESS per cup.Thaw your wing tips and spread them out on a large cookie sheet. Spray them w/Pam or equivalent. Sprinkle them w/salt, pepper, and sage. Roast the tips in an 350 degree oven for around 30 minutes or until darker in color and roasted-looking. Remember, they're for stock. Add the water, all other ingredients, and the chicken wing tips to the pot, bring to JUST UNDER a boil, then reduce heat to low. Cover and simmer for 6-8 hours. Tip: if you boil your stock, it will be cloudy. Still delicious, but cloudy.Cool stock, and pour through a fine mesh sieve and discard the solids. Cool stock completely and skim off all of the fat.
