What Are The Ingredients For Amy C's Chicken Soup Recipe?The ingredients for Amy C's Chicken Soup are: 6 Chicken Legs1container of Trader Joe's Mirepoix mix 1 can of Organic Diced Tomatoes 1 bunch of purple Kale 2 Yellow Squash 40 oz Water (preferably filtered) Salt - to taste (plus a dash for chicken) Pepper - to taste (plus a dash for chicken) Paprika - 1/4 tsp Chili Powder - dash (plus a dash for chicken) Poultry Spice (Penzey) - 1 tsp in mirepoix, to taste on legs (plus a dash for chicken) Parsley - 1 tsp Oregano - 1 tsp Cumin - 1/4 tsp Cinnamon - dash Bay Leaf - 1 leaf Minced Garlic - 1 tsp Piri Piri Sauce - 1 tsp Olive Oil - 2 Tbsp How Do I Make Amy C's Chicken Soup?Here is how you make Amy C's Chicken Soup: Saute mirepoix of diced onion, carrots and celery in about a Tbsp of olive oil. Add a tsp of minced garlic and a tsp of Piri Piri sauce. Saute for 2 minutes then add salt, pepper, cumin, cinnamon, poultry spice (Penzey), oregano, paprika and a dash of chili powder.In a Dutch oven add 40 oz filtered water, a bay leaf and about a tsp of parsley (Penzey again) and set it on the stove to medium.While the mirepoix was cooking, season chicken (you can use breasts but make sure they have not been de-boned so you get a tasty broth) with a dash of salt, pepper, chili powder and poultry spice. Once the mirepoix and spices had cooked down, add the mixture to a Dutch Oven. Add other Tbsp of olive oil to the saute pan and brown the chicken legs seasoned side down, seasoning the other side with the same mix. You can add a touch of water to the pan to keep from scorching. Once the chicken is browned on both side, add them to the Dutch Oven.Bring to a boil then turn down the heat to simmer for 2 hours. After two hours remove the chicken and let cool on a plate so you can remove the meat. While the meat is cooling, you can add a can of organic diced tomatoes, sliced yellow squash (or zucchini) and kale (you can use any type of greens).Once the meat had cooled, clean it from the bone and tear it into bite sized pieces and add it back to the pot.
