What Are The Ingredients For Ann's Chicken Soup Recipe?The ingredients for Ann's Chicken Soup are: 1 whole chicken - about 5 pounds or sorosemary, thyme, bay leaves, whole allspice, black peppercorns tied in a bundle in a small piece of cheesecloth 8 carrots, washed and ends removed 7 celery stalks, washed and cut into large pieces 4 or five red potatoes, washed but unpeeled 10 large mushrooms 1 cup sweet bell peppers, chopped spelt noodles - about 7 oz dry 2 tsp sea salt 2 quarts or so water How Do I Make Ann's Chicken Soup?Here is how you make Ann's Chicken Soup: Wash chicken and place in large pot. Add all of the celery, 5 of the carrots, the herb packet, 1 tsp salt, and enough water to cover the chicken - about 2 quarts. Bring water in pot to a boil, and let it simmer, covered, for about 2 hours, or until the chicken is falling off the bone. Remove from heat, remove chicken, carrots, celery and reserve - letting cool enough to touch. Strain the broth through a colander into another pot. Discard herbs. Remove bones and skin from chicken, cut into smaller pieces, cut carrots and celery into slices and put all back into broth on the stove. Slice the remaining carrots, mushrooms, potatoes (cut into pieces) and add to broth. Add bell peppers. Add spelt noodles. Cook for another hour or so until the noodles are cooked and the carrots and potatoes are done. Taste for seasoning and add the remaining teaspoon of sea salt if needed.
