3 Chicken Leg Quarters, skinless (with or without bones)
3/4 cup yellow onion, chopped
3 stalks celery, cut into 2" pieces
2 Tbs Italian seasonings
4 cloves garlic, diced
1/2 tsp sea salt
1/4 tsp Lemon Pepper (no salt added)

1 can (15 oz) diced tomatoes, no salt added
1 can whole kernel corn, no salt added, drained
1 can cut green beans, no salt added, drained
1 can sliced carrots, no salt added, drained
1 can black beans, no salt added, drained & rinsed
2 medium zucchinis, sliced
1 cup frozen peas
1/4 cup yellow onion, chopped
1 tsp Tabasco sauce, adjust for taste
Pepper to taste
optional - sea salt, to taste


How Do I Make Bunny's Chicken Vegetable Soup?

Here is how you make Bunny's Chicken Vegetable Soup:

Heat a large kettle on medium; add olive oil & add chicken quarters, browning on both sides. Add onion & saute, stirring frequently, until slightly browned. Add celery & spices; stir constantly & heat for 30 seconds, adding garlic last. Add 6 to 8 cups water (or more, to cover), Heat to a boil, covered; then lower temperature and simmer for at least 30 minutes, until chicken is cooked & "falling off" bones. Remove chicken to a plate, cool and then remove meat from bones, cutting into 1/2" pieces.Cool the stock until fat hardens enough to skim most of it off the top. (Can substitute canned low sodium chicken stock and 3 cups canned cooked chicken. It does increase the sodium per serving.)Add chicken back to stock, heat to a simmer, then add the vegetables and any seasonings.
