Here is how you make Cathy's Chicken Vegetable Soup:

Early in the day, or the night before, make the chicken broth--don't buy it, the effort is worth it!Place whole, organic chicken in a pot with 3 ribs of celery with leaves, cut into chunks; 3 medium carrots, cut into chunks; 2 medium onions, quartered; 2 bay leaves; 1/2 tsp dried rosemary; 1/2 tsp dried thyme; 10 whole peppercorns; with 2 quart cold water. Bring to a boil, then reduce heat. Cover and simmer for 2 hours. Remove chicken to cool. Strain broth, (I usually keep the carrots), discarding vegetables. Refrigerate if not used immediately. When chicken is cool enough to handle, pull meat off bones.To make the soup...To the broth add:Chicken, pulled from bones; 1-chopped yellow onion; 2-ribs celery, chopped; 1 handful of fresh spinach, 3/4c. broccoli, diced; large handful of green beans, cut-up; 4 cloves minced garlic; 1 tsp each of parsley, basil, thyme and sage; Salt and pepper to taste.Bring to boil then reduce heat to simmer and cook at least 30 minutes.
