Here is how you make Chicken and Mixed Vegetable Soup:

Wash and remove skin and fat from chicken and boil in 6-8 cups of water for 30-40 minutes until done. If you want fat free broth, cook chicken one day ahead and let set in refrigerator overnight to let broth gel and remove the fat that has hardened on the top for fat free broth.Remove chicken from broth to cool - (if you have let set overnight to remove fat, then after removing the fat, heat just enough to get the gelled broth from chicken.) Add onions, celery and mixed vegetables with sage, poultry seasoning and salt and pepper to broth and let cook on medium heat until almost tender.
