2 cups minced swiss chard

Sautee 2 large, roughly cut onions in a pot with 2 large roughly cut potatoes. When the onions begin to turn translucent or when they seep liquid, add the whole chicken! (I used a half fryer)Add 2-3 cups water and let simmer, covered, for up to an hour. Pull out the chicken, let cool enough to tear the meat off the chicken and add back to the soup.Add more water to thin the broth and bring back to a simmer, adding 2 cups minced swiss chard (you don't want any big chunks of chard or they get hard to scoop with a spoon!)Eat with a big smile on your face, adding salt, pepper and thyme according to taste.Serving Size: Makes four 2-cup servingsNumber of Servings: 2Recipe submitted by SparkPeople user AUBRAZILLA.
