Rinse chicken and remove excess fat. Fill large stock pot with 12 cups of water. Add chicken, salt, pepper, onion and garlic to pot. Bring to boil, then reduce heat and simmer until chicken is tender. Skim fat and any foam that may form from pot as the chicken is cooking.When chicken is done, remove from pot and let cool on plate.Add rice to broth in pot. Cook per directions on package (about 20 minutes). While rice is cooking, tear cooled chicken into bite-sized pieces.Add tomatoes, mushrooms, chopped celery and chicken to soup mixture after the rice has cooked for about ten minutes.
