42 oz Chicken broth
2 yellow squash, sliced
2 zucchini squash, sliced
6 mushrooms, sliced
2 leeks, sliced
1 yellow pepper, chopped
1 red pepper chopped
1 bag baby carrots, chopped
1 bunch celery, sliced
10 small red potatoes, quartered
1 bunch fresh parsley, chopped
Salt & Pepper to taste

Here is how you make Chicken Veggie Soup (from whole chicken):

Makes about 20-24 1-cup servings. Place chicken (no giblets) in large pot and cover with water. (I use bottled water cause the tap water at my house has a lot of chlorine in it and I don't like the soup smelling like pool water). Heat over med-hi heat until meat falls off the bone (1.5-2hrs). Remove meat and pieces of chicken from broth, keep broth in pot. Let chicken pieces cool, then remove bones, skin, and fat from meat. Add chopped vegetables and broth to broth in pot. Return meat to pot, add pepper, salt, and basil to taste, and turn heat back on to med-hi. Heat through until carrots and veggies are tender.
