3 TBSP EV Olive Oil

4 Chicken Thighs, cooked & cooled, skin removed. Ideally, leftover smoked or barbecued chicken.

1 medium sweet onion. Vidalia would be perfect but use what you have on hand. Chopped medium.

1 large carrot, grated.

1 large tomato, chopped medium.

3 cans of tomato soup

3 cups milk (2%)

Salt & Pepper to taste.

*1/2 tsp Liquid Smoke ONLY if NOT using leftover smoked chicken.

Here is how you make Creamy Tomato and Smoked Chicken Soup:

Pour olive oil into a heavy soup pot on medium-high heat. Add chopped onion & grated carrots to oil and stir to coat. Allow them to brown a bit, stirring once in a while. While those are sauteeing, take the chicken off the bone and chop into medium pieces. Add chicken to the onions & carrots until heated through. Reduce heat to medium and add tomato and any juice from the tomato.Sautee for a few more minutes until tomatoes have softened a bit. Add the tomato soup and milk, stirring (or whisking if you prefer) until smooth.*If you're using the Liquid Smoke, add it here to taste. Start with half a teaspoon, stir, let heat a moment or two and then taste.
