Boil chicken in water that covers the chicken until the chicken is cooked.While chicken is cooking, chop the veggies and set aside.Allow water to boil down to 2 c. When the chicken is cooked, pull out of the pot and cut into pieces. Add the chicken broth and herbs, veggies, rice, and the chicken pieces to the pot. Cook for approximately 1 1/2- 2 hrs on a medium to low setting until the veggies are cooked, stir occasionally.Serve with bread, pita chips, or crackers.
