The ingredients for Elizabeth's Lightened Up Chicken Tortilla Soup are:

1.5 cup kernels Yellow Sweet Corn, Frozen - thawed
1 can - 14.5 oz - HEB Black Beans, drained
1 can - 14.5 oz. - Kroger Fire Roasted Tomatoes
1 Chicken Breast (cooked), no skin, roasted, diced
1 Med. Green Bell Pepper, diced
1 Medium chopped Onion, raw
8 cup (8 fl oz) Water, tap
3 tsp Better Than Bouillon - Chicken Base
3 oz Frito's Chili Cheese Flavored Corn Chips, crushed

Add spices to taste - this is what I add:

3 tsp Tony Chachere's Cajun Seasoning
1 tsp Cumin (ground)
1 tsp. Salt
1 tsp Garlic powder
1 tsp Pepper, black
1 Bay Leaf


How Do I Make Elizabeth's Lightened Up Chicken Tortilla Soup?

Here is how you make Elizabeth's Lightened Up Chicken Tortilla Soup:

Add crushed Fritos to water and bring to boil. Let simmer on medium low to dissolve Fritos as you make soup. Saute onions, corn and bell pepper with cooking spray until tender. Add to Fritos water mixture. Add chicken base, fire roasted tomatoes, drained black beans and diced cooked chicken. Add spices to taste - I use Tony Chachere's, salt and pepper, bay leaf and a touch of cumin and garlic. Simmer for about 20 minutes. This is good solo, but can be served over rice, and/or topped with a few more crushed fritos or other corn chips, light sour cream and shredded sharp cheddar. If you use rice, do not add to the soup - but keep it separate, or it will make the soup mushy. Recipe results are for just the soup - so add the others to your tracker if you decide to use them.
