2 medium carrots sliced
2-3 stalks celery chopped
1 small sweet onion, chopped
1TBSP olive oil
8 ounces egg noodles, cooked and drained


How Do I Make Friendship Chicken Soup?

Here is how you make Friendship Chicken Soup:

In large stockpot, saute onions in olive oil, 5 minutes. Add celery and carrots, saute additional 2 minutes. Add chicken breasts and water to cover (approx. 2 quarts) , 1 - 2 TBSP chicken boullion granules, fresh ground pepper (1 tsp). Bring to low boil, reduce to simmer for one hour. Remove Chicken from broth and shred meat, discarding skin and bones. Reserving vegetables, strain broth through cheesecloth lined colander. Place broth back in stockpot along with vegetables, chicken, and noodles.
