I made this soup with leftovers from the Basil Gnocchi w/ Mushroom Ragu Gnocchi (in my cookbook), and left over grilled chicken. I did my best analyzing the content to get a decent caloric count, but it is not exact. The Gnocchi you can make from the other recipe as well or buy from the store. Prep time will be short if you are using leftovers to make this soup. If not it will be considerably longer, but definately worth it! Cook time is your preference.

1 large grilled skinless chicken breast
4 cups water
4 chicken bouillon cubes
1 Tbsp chopped fresh parsley
salt and pepper to taste

2 Tbsp flour (optional)
water to make a thickening agent

Here is how you make Grilled chicken and Gnocchi Soup:

1. Bring 4 cups water with 4 bouillion cubes to a boil.(you could also use chicken stock), then reduce heat.2. Cut up grilled chicken breast to size you prefer, and put in bouillion.3. Cook for about 30 mins. (you can let this cook as long or as little as you like)4. Add cooked gnocchi last 10 mins of cooking time. Add salt and pepper to taste.5. Optional, to thicken, add 2 TBSP flour to about 1/8 cups water, mix well then add to soup.
