1 package long grain and wild rice with seasoning (like Carolina brand; yields 2 cups)
2 cans cream of mushroom soup (low-fat)
1 can cream of chicken soup (low-fat)
2 medium carrots, chopped
1 stalk celery, sliced
1/2 large yellow onion, diced roughly
2 cans low-sodium chicken broth
2 tbsp minced garlic (prepared)
2 tsp dried thyme leaves
1 cup sliced mushrooms
1 1/2 cups water
salt and pepper to taste

Cook chicken breasts in pan with cooking spray till cooked through. Remove from pan and cut into bite-sized pieces. (I used frozen pre-cooked chicken breasts so all I had to do was heat and cut.)Meanwhile, cut up onion, celery, mushrooms, and carrots and cook in soup pot sprayed with cooking spray over medium high heat till onions become translucent. Add chopped chicken and remaining ingredients to pot.Bring to a boil, then reduce heat and simmer for at least 45 minutes, stirring occasionally.
