Place the chicken breasts in a pot and cover with water and bring to a boil. You want to cook the chicken breasts long enough to get them just done. The carrots will take the longest to cook, when the onion is chopped add it with the carrots.Now yo are ready to make your noodles, You can use store bought egg noodles or make your own. Making your own is cheaper and I think it's fun.Place the flour in a bowl and add the 2 eggs to a well in the center. mix the flour and eggs working from the center until you have a dough that has come together.remove the dough from the bowl and place it on a floured surface. Need the dough a few minutes then let it rest for about 10 minutes. After it has rested roll the dough out until thin and then cut into your noodles. the noodles will plump up some when cooked, and I have learned keeping them down to about 3 inches long is easier to eat than very long ones. After you noodles are rolled out and cut then place them in the pot. Get the cooled chicken and if the skin was on it remove the skin and remove the meat form the bone. I like to cut eh chicken into 1.5" -2" cubes and then shred those with my hands directly into the pot. Check for pepper and salt seasoning and, give it a few minutes to come all together and it is ready to serve. We like to add a bit of fresh parsley or cilantro right before serving.
