This is the cuban recipe with a twist. I added celery and a plantain for sweetness. The original recipe is only with carrot, potato and 2 oz angel pasta ( I use 1 oz) to reduce carbs. Saffron is optional. Sometimes I add more veggies like spinach, broccoli or kale etc and calculate them separately but they don't add too much calories.

In a large pot add oil, onion,bell pepper and cook for 3 minutes then add garlic , oregano and tomato sauce cooking for another 2 minutes adding the chicken with water and cook over medium heat until chicken is tender. (20 minutes). Add diced potato, plantain and veggies and cook for another 20 minutes in medium -low heat. When the veggies are tender add the pasta and saffron and cook for another 10 minutes.
