-2 small boneless, skinless chicken breasts.
-1/2 medium yellow onion, diced
-1/2 cup diced celery
- 12 baby carrots, sliced
- 1/4 tsp pepper
- 2 pinches of italian spice mix
- 2 pinches of dried basil
3 oz of Orzo pasta or other small pasta

1) Chop vegetables2) Heat vegetable broth to boiling in a medium pot with the pepper, italian spice and basil.3) Meanwhile, spray a small saucepan with nonstick cooking spray. Saute carrot and celery over medium heat until they soften.4) When the broth boils, add the chicken breasts and the vegetables.5) Simmer on low heat uncovered for 30 min or until chicken breasts are fully cooked.6) Gently shred chicken breasts so smaller pieces of chicken are fully incorporated into the soup.7) Return to boil over medium heat.
