2 tsp olive or vegetable oil
2 cans low sodium ck broth
One medium onion
1 tb minced garlic (You can buy bottled minced garlic in the produce section )
2 carrots cut into ? inch rounds
2 stalks celery
Egg noodles (1 ? 1 ? cups eyeball it)


How Do I Make Juli's Chicken Soup?

Here is how you make Juli's Chicken Soup:

Finely dice the onion and put into a Dutch oven with the olive oil. Microwave the ck if frozen for two minutes cut into ? inch chunks and add to the onions. Cook on medium high until pink disappears and onion softens. Add garlic, carrots and celery. Continue cooking until carrots are crisp tender (about 2-3) minutes. Add broth and turn heat to high. Add 1 to 1 ? cups of noodles depending on preference. Boil until noodles are tender (It doesn?t take very long). Season with salt and pepper to taste. This recipe freezes well.
