In a stock or soup pot add the olive oil, onions and red peppers, saute on medium heat til soft. Add the garlic and shredded carrots, cook for a minute. Add the mushrooms, cook another 2 minutes, add chicken breast and cook until browned on sides. Add seasonings and frozen vegetables. cook another minute then add broth and bring to a boil. Add the noodles and let simmer til chicken is cooked through. The longer it simmers the better it tastes. Cook at least 25 minutes.
