3 boneless skinless chicken breasts, cubed
3 large carrots, sliced
2 medium onions, chopped
2 large celery ribs, sliced
3 cans chicken broth (Swansons 99% fat free)
2 cups water
1 teaspoon olive oil
2 bay leaves (take out before serving)
Choose your seasoning...I used a tablespoon of Garlic Garni ( a garlic seasoning blend ) and a tablespoon of 12 spice mix I bought at Sam's Club--the 12 spice mix has some cayenne in it, hence the 'spicy' name.
Saute onions, carrots and celery in olive oil until soft, add chicken broth and water and bring to a boil. Add chicken and turn down to moderate simmer for 20-30 minutes. Yummy!
