-bonless skinless chicken thighs
-aprx 2 whole carrots
-2 celery stalks
-1 med/large onions
-1 large summer squash (yellow) or zucchini
-water-feel free to use bottled water
-cream of mushroom can be fat free or Healthy request but nutrition information will change slightly
-rice-feel free to sub for brown rice but nutrition information will change slightly
-add spices to suit your taste. I use Adodo and a little bit of red pepper flakes. But fresh garlic, onion powder, etc can make a big difference






How Do I Make Manda's Chicken Soup?

Here is how you make Manda's Chicken Soup:

In a large pot add water and let come to a boil. Once boiling add chicken thighs, onions,celery and carrots and boil about 15/20 mins-remove chicken from water- and leave everything else in the pot. On a cutting board cut/shred chicken into bite size pieces and once done return to the pan. Then add squash, rice, cream of mushroom soup and desired seasonings and bring to a low boil /simmer.
