3 boneless, skinless chicken breasts
3 tbsp extra virgin olive oil
2 large stalks of celery (diced)
3 large carrots (2 diced, 1 sliced)
1 small red onion (diced)
2 tsp diced garlic (or 2 diced cloves fresh)
5 leaves of fresh basil (chopped)
2 tbsp of fresh rosemary leaves (chopped)
2 cups of green beans
3 medium potatoes (diced, large bite-sized pieces)
6 oz (about 3 handfuls) of Ronzoni Whole Wheat Penne Rigate
6 cups of chicken broth


How Do I Make Momma's Homemade Chicken Soup?

Here is how you make Momma's Homemade Chicken Soup:

Marinate Chicken Breasts in 2 tbsp Olive Oil and fresh rosemary & basil for about 15-20 minutes in the refrigerator. (can also marinate overnight). Sear both sides of chicken breasts (med high-high) in non-stick pan with remaining 1 tbsp of oil. Remove chicken from pan and lower temperature to medium. Add celery, diced carrots, and onion (save sliced carrots for later). Once onions start to 'sweat' add garlic. Saute for about another minute or two. Then add about 1/2 cup of chicken stock to deglaze the pan. Transfer liquid and veggies to stock pot. Add remaining chicken stock. Bring to boil. Add potatoes and whole chicken breasts. Reduce to a simmer, let simmer for about 1/2 hour. Add green beans and pasta and simmer for another 2 hrs or so. Add water during cooking process as necessary.After about 2 hrs of cooking, remove chicken breasts to plate. Take two forks and pull apart chicken breasts into shredded pieces. Return to pot.Optional: You can also take out about 1/2 cup of the stock from the pot during the last 1/2 hr of cooking, mix it with about 1tbsp of corn starch, and mix it back into the soup if you like a thicker soup.
