2 boneless, skinless chicken breasts
2 medium potatoes, peeled, chopped into cubes (i prefer Russet potatoes)
2 - 3 Carrots, peeled, chopped into generous-sized discs
1 Small turnip, peeled, chopped into cubes
Ripe tomatoes, chopped coarsely
2 - 3 cloves of garlic
3 Cups Home made chicken stock
1 cup 15 Bean Mix (i used dried bean mix, soak beans over night and simmer on the stove for an hour or so before adding to soup!)
1/2 cup Sweet bell peppers, chopped, (i mix all colours for extra eye appeal)
1 -2 cups fresh cut green beans
1 - Can stewed tomatoes (I use Aylmer accents original - has celery and other veggies already in the can!) * Oregano, ground, 1 tsp (remove)
Oregano to taste
Garlic Powder to taste
6 - 8 cups of water

slow cook chicken breasts in stock with garlic and one whole, coarsely chopped onion for 8 - 10 hours, shred chicken. Add chicken and stock to water, add salt, pepper, and desired spices. simmer for about an hour. Add prepared beans. simmer for a while. Add the rest of the ingredients and simmer until potatoes are desired doneness. Spoon and serve!soup is a little high in sodium.
