Carrots 4 medium, raw - chopped or diced finely
Celery, raw 3 stalk, medium (7-1/2" - 8" long - dice finely
1 cup, sliced Zucchini - medium Zuc - finely sliced
1 whole bell pepper, red, sweet, raw - chop into small pieces
2 cup Spinach, fresh - chopped
3 medium (4-1/8" long) Scallions, raw - diced green onion
4 Bay leaves dried
2 tsp Thyme, ground
2 tsp Basil
2 tsp Oregano, ground
2 tsp Rosemary, dried
1 tsp Windsor Kosher Salt
1 tsp Pepper, black
2 tsp Parsley, dried
1 tsp Ginger, ground
6 cups of cooked chicken - preferable from a freshly oven roasted chicken, chop into bite size bits

Here is how you make Trish's Mediterranean Style Chicken and Vegetable Soup:

Pour Chicken broth into a large stock pot (preferably homemade chicken bone broth, but store bought low sodium broth is fine - calories are similar). Prep all vegetable ingredients - Garlic, Carrots, celery, zucchini, red pepper, green onion and add them and the spices to the broth. Simmer on medium heat for 20 to 25 minutes.While the veggies and broth are simmering chop the spinach and the chicken and set both aside. After the soup has simmer for 20 to 25 minutes add the chicken and simmer on low heat for an additional 15 minutes. Once the soup is almost done, test veggies for "doneness" they should be tender but hopefully not too soft. Add the spinach at this time and simmer on low for an additional 3 minutes and serve.Serve in 2 cup portions with a wedge of fresh lemon to squeeze in the soup.
