1 medium yellow summer squash, cut into 1/2" pieces
1 medium zuccini, cut into 1/2" pieces
2 cups Hunts crushed tomatoes
1 box (48 oz) chicken broth (or 48 oz water with chicken base)
2 bay leaves
5 whole cloves, crushed
1/2 tsp ground cinnamon
1/4 tsp cayenne pepper (more or less per preference)
1 tsp turmeric
1 tsp minced garlic
1 can chick peas, drained
1 medium carrot, chopped into 1/2" pieces
1 medium onion, chopped
Juice from 1/4 lemon
Zest from 1/2 lemon
Sea salt to taste

Here is how you make Moroccan Chicken Stew:

Add EVOO and onions to large pot and cook till soft, about 5 min. Add spices, except salt, and chicken pieces. Stir and cook quickly over medium heat for a few minutes, just to brown the outside of the chicken pieces. Do not cook chicken through; it will cook to doneness and tenderize while soup is simmering. Add broth, chickpeas, carrots, and crushed tomatoes; bring to a boil. Cover and simmer on med-low for 20 minutes.Add lemon juice, zest, yellow squash and zuccini and continue to simmer till vegetables are tender, appr 30 minutes. (This may take longer depending on firmness of vegetables and variations in stoves/cook tops. Season with sea salt to taste and serve with farro, quinoa or couscous if desired.Serving Size:?Makes 10 servings.
