2 Andouille sausage links (Coleman Chicken sausage), sliced into bite sized pieces
1 cup heavy cream
2.5 cups water
1 Knorr veggie bullion cube
1 tsp creole or bay seasoning
1 tsp thyme
1 bay leaf
1/2 tsp pepper or Ms Dash
1/4 cup dry sherry
2 T chopped fresh parsley or green onions for garnish, optional

Here is how you make Low Carb Scallop Chowder:

heat medium saucepan over medium flameadd oil and butter add chopped onion, celery and pepper - saute till soft - about 8 min. after about 5 min of sauteing veggies add thyme, creole or bay seasoning, bay leaf and pepper and continue sauteing until veggies are soft.Add water, bullion cube, sherry, sausage and heat till boiling. Boil for a couple minutes until alcohol from sherry cooks off.Add scallops and cream - heat as needed to return to serving temperature. The scallops don't need much time to cook - so don't overdo it here.Ladle into bowls, garnish with parsley or green onions if desired. Makes 4 8 oz servings.
