2 med-lg cucumbers
1 large red bell pepper
1 bunch scallions
1 clove garlic
3 C. V8 plus calcium juice
1C. beef broth
1/4 C olive oil
1/3 C red wine vinegar


How Do I Make Red Gazpacho?

Here is how you make Red Gazpacho:

Place tomatoes in boiling water for one minute; immediately plunge in ice water. When coolenough to handle, peel and remove seeds. Slice cucumbers lengthwise and remove seeds. Finely chop tomatoes, cucumbers, bell pepper and scallions. Place in bowl and stir to mix. Finely chop garlic (or used minced garlic from a jar). Add remaining ingredients, along with 1/3 cup red wine vinegar. Transfer 2 cups of soup to a blender and puree. Return to bowl and mix well.
