1 tbsp olive oil
1 medium onion, finely diced
2 garlic cloves, minced
1 tsp paprika
2 medium potatoes, finely diced
1 celery stalk, thinly sliced
1 bay leaf
1/2 tsp salt
1 tsp sugar
black pepper
4 cups corn kernels
5 scallions, thinly sliced
1 cup milk
1/4 tsp dried thyme
cayenne pepper (depends on how hot you like it)


How Do I Make Corn and Potato Chowder?

Here is how you make Corn and Potato Chowder:

- in a large pot, melt the butter and olive oil over medium heat- Saute the onions and garlic about 10 minutes- add paprika and let cook for another minute- add the stock, potatoes, celery, bay leaf, salt, sugar, and pepper to taste and cook about 15 minutes- add corn and scallions and cook for another 2 minutes- remove bay leaf - blend all but 2 cups of the soup- combine everything back in the pot and add the milk, thyme, and cayenne pepper- cook for 5 more minutes- Serve and Enjoy!Number of Servings: 8Recipe submitted by SparkPeople user YISMET.
