How Do I Make Ratatouille?

Here is how you make Ratatouille:

use an equal amount of tomatoes, zucchini, eggplant. Wash and cut into thick slices Using a large pot make layers starting with the eggplant, then the tomatoes, and finally the zucchini and repeat until the pot is almost filled to the edge. Add some chopped garlic cloves and parsley, chopped between the layers. Season with salt and pepper. Cover and cook under very low heat until the vegetables are tender, approx 1-2 1/2 hours. Serve 20 min later. Use soup bowls as it is at that stage more of a soup with the liquid being mostly water from the veggies. Bon Appetit! Low calorie and very satisfying. Simple ingrediants and its quick to make. You can have it as soup and later on drain the liquid and eat with a 3-4 oz sized fish or meat, or even as a pizza topping on dough or even healthier a whole grain pita!
