I came up with this recipe based on Campbell's Chicken & Sausage Gumbo. Eventually, I hope to try to reduce the sodium by using fresh tomatoes in place of the canned Rotel tomatoes.

1 can tomato paste (optional)
1 bag gumbo mix (or other vegetable mix)
14 oz smoked sausage (I use the Healthy Ones skinless smoked sausage)
Cajun seasoning (optional)

Here is how you make Sausage Gumbo:

Combine all ingredients except tomato paste in large soup pot.Simmer, stirring regularly, for about 20 minutes.Add tomato paste sparingly to thicken soup.
