Preheat the oven to 350 degrees.Cook the udon noodles according to the instructions on the package.Very thinly slice the leeks diagonally, using the white part only.In a saucepan, combine the chicken broth, soy sauce, mirin, sugar, and salt. Bring to a boil.Divide noodles among 4 oven proof bowls.
