1 lb. turkey Italian sausage (sweet or hot)
6 slices bacon, chopped
3/4 C onion
4 cloves garlic
2 medium potatoes, sliced with skins
4 C water
1/3 C half and half
2 C kale, chopped
salt and pepper to taste


How Do I Make Zuppa Toscanna?

Here is how you make Zuppa Toscanna:

Remove sausage from casing. In dutch oven, brown sausage and bacon with onion. Drain any fat. Add garlic and cook for one minute stirring constantly. Add potatoes, water, and half and half to the pan. Bring to a boil. Reduce heat and cook until potatoes are done, about 15 minutes. Add kale and cook for 4 minutes until kale is wilted. Serve topped with freshly grated parmesan cheese.Makes 6, 1 C portions.Note: This can also be made in a crock pot. Cook the meats in a skillet, add onion and garlic and cook until onion clarifies. Add meat mixture, potatoes, and water to crock pot. Cook on low for 6 hours or high for 4 hours. Five minutes before serving, add half and half and kale. All to wilt for about 5 minutes and serve.Number of Servings: 6
