How Do I Make E-Z Filled Bell Peppers?

Here is how you make E-Z Filled Bell Peppers:

Cook brown rice ahead of time using 2 1/2 cups water to 1 cup rice. You may decide to not use all that it yelds when cooked. Brown ground beef well and drain all fat. Add Manwich and 1 cup water. Cook through. Meantime, cut bell peppers in half and clean out membrane. Soften by cooking in water.I use my microwave and cook them for 10 minutes on one side, turn over and cook additional 5 minutes while the other side is submerged. You can also boil them on the stove in a large pot of water. Drain well. Add rice to cooked meat mixture and put into pepper halves. Top each pepper section with half a slice of cheese and place in hot oven for a few minutes (or plate them microwave until cheese melts.) Good served with a soft breadstick, not included in calorie count per serving. The brown rice has B vitamins; the Manwich sauce has lycopene for fighting cancer; and the peppers are full of vitamin C. Satisfying and healthy, these will warm you up on a cold night. This will make 6 servings based upon medium peppers. Sometimes, the peppers will be oddly shaped or you may tend to overstuff them. This will change the yield as will using larger bells. If you need a vegetarian dish, make using only the rice and add chopped zucchini, mushrooms, and other colored bell peppers.Number of Servings: 6Recipe submitted by SparkPeople user KOALA_BEAR.
