Here is how you make Andalusian-style Oxtail Stew:

Brown oxtails in olive oil in Dutch oven. Remove and set aside. Add chopped onion, garlic and green pepper. Cook until onions are translucent, about 5 minutes. Add white wine, bring to simmer. Cook for 5 minutes. Add broth and chocolate, stir to melt chocolate. Add oxtails. Cook 1 and 1/2 hours. Add carrot, paprika and pepper.
