2 C diced onion
1 C butter (split)

Here is how you make Mom's Potato Filling:

Make mashed potatoes.Saute onions and celery in 1/2 c of butter until onions are golden brown. Cube bread and place in large bowl. Add onions and celery and parsley to bread. Melt 1/4 C of butter in pan and drizzle over bread, celery, onions and parsley and mix well. Add mashed potatoes and mix well. Place mixture in large baking dish. Slice remaining 1/4 C of butter into about 5 pieces and place on top of filling.
