Here is how you make Healthy Sweet Potato pie:

Start with cooking potatoes skin on in oven for 30-45 minutes or until very soft. While in oven prepare crust by grinding cereal for crust to fine consistency. In micro. melt smart balance. pour crumbs in pie tin and sprinkle with spice mixture(cinn. nutm., allspice.) Also grate some of the orange zest in crust ( leave some for filling) pour melted butter in crumbs and mix up. Finally add 1tbl agave nectar and 1 tbl brown sugar to crumb mix.press crumb mix into shape. work it across the bottom and up sides, pressing firmly. throw in oven for 8-10 minutes. now in a bowl throw orange zest, remaining spice mix,juice form orange, milk, agave, remaining sugar,apple juice(1/2 the quantity), and vanilla.mix well and taste for flavor. adjust spices to liking. once you have desired flavor add your egg whites. set mix aside. pull pots. from oven and over a bowl carefully pull off skin.(caution very hot) reserve skins and a great crispy snack(crisp them in oven) tastes great. in the separate bowlwhip the pots. with electric hand mixer. when temp. is cooler enough to touch it slowly add mix from other bowl.mix should be pourable , but on the thicker side. You will need to scrape down the bowl.
