cut 1 lg eggplant into 1/2" slices--approx 15-20 slices depending on size of eggplant---To make coating mix together in sm bowl:1 cup mayo (I use soy--use LOW/NON- FAT MAYO TO REDUCE CALS) and 1/2 cup tomato paste (I use a little less due to intense tomato taste)-then in another bowl combine 1/2 cup yeast flakes w/ 1/2 cup cornmeal or wheat germ--coat one side of eggplant slice-dip into breading-repeat w/other side of slice-place on a cookie sheet-follow same procedure with remmaining slices-bakes at 350F for 10 min-flip over and bale for an additional 10 min
