Soak Mung beans, rice and fenugreek seeds in water overnight. Before making the crepes grind rice, beans and fenugreek seeds along with onions, chillies, cumin seeds and ginger in a blender until a smooth paste is formed. Pour this batter into a container and add salt. Mix well. Heat a griddle on low medium heat. Grease the griddle and pour 1/4 cup of the batter and spread into thin crepes. After it turns brown flip it put it on a plate. Spread some butter if you wish.
