What Are The Ingredients For Luscious Nut Curry with Cabbage and Beans Recipe?The ingredients for Luscious Nut Curry with Cabbage and Beans are: 1 cup dried pinto beans, soaked and drained (or 3-4 cups canned, drained, rinsed)1 small green cabbage, shredded (about 4 cups, raw) 1 medium yellow onion, sliced into crescents 1 carrot (you don't have to peel, but you can), diced 2 small sweet potatoes, about 150 grams total, scrubbed (again, no need to peel) 1 cup frozen spinach, thawed and drained 1 cup frozen broccoli, thawed and drained 1 shy Tablespoon butter (use oil for vegan) -- I like Kerrigold 3 - 4 cups water + 1 teaspoon Better than Ham flavoring + 1 teaspoon Better than Vegetable flavoring *Or 3 - 4 cups vegetable broth* 3 bay leaves (or two big ones) 1 cinnamon stick 3 whole cloves (optional) Curry Sauce: 1/4 cup smooth peanut butter (I used Jif Natural) 1 cup light coconut milk (around half a can) 1/2 - 3/4 cup Silk Light Original Almond Milk (or your preferred unsweetened milk/milk alternative) 2 generous Tablespoons sliced almonds 2 generous teaspoons curry powder (yellow) 1 teaspoon Hungarian paprika (sweet) 1/2 teaspoon ground cardamom Sriracha ("rooster sauce") to taste How Do I Make Luscious Nut Curry with Cabbage and Beans?Here is how you make Luscious Nut Curry with Cabbage and Beans: 1. Melt butter in a large pot over Medium heat. Add in onions and carrots, cover, and sweat until onions begin to soften. Add cabbage and sweat for a few more seconds , combining it with a wooden spoon.2. Add pre-soaked beans to the pot. Add in water or broth until just up to but not quite covering the very tops of the cabbage/bean pile and stir/fold to combine. Scatter the bay leaves, cinnamon stick, and cloves in the mixture, cover, and turn the heat to High. 3. In the meantime, poke holes in the sweet potatoes and microwave on High for 7-8 minutes until tender. Allow to cool and then dice.4. Bring the beans and cabbage to slight boil and promptly lower the heat to Medium-Low. Simmer, covered, for 15-20 minutes while you make the sauce.5. For the sauce, warm the peanut butter in a small saucepan over medium heat and add in desired amount of sriracha. When the mixture is more liquid in state, add in the coconut milk and whisk to combine. Slowly add in the almond milk, using personal preference to determine how much to add; if you want a thicker sauce, use less. Thinner, add more. Add in the paprika, cardamom, curry powder, and almonds. Whisk.5. Cover the sauce and bring to a boil. Immediately remove from heat and whisk to disperse the film on top (it will happen -- it's not a big deal).6. When beans and cabbage are tender, drain the liquid from the pot and carefully remove the cinnamon stick and bay leaves. You can save or discard the liquid, but return the drained mixture to the pot and heat over Medium-Low. Add the thawed broccoli and spinach to the pot and gently combine. Add the sweet potatoes and fold to combine.7. Pour in the curry sauce to your liking from the saucepan to the large pot. I added about half or so of the curry sauce since it is quite rich, and I was left with a little over a cup of sauce left. I don't recommend drowning the mix; instead, I would advise adding sparingly and serving extra on the side for some good old fashioned dunking!8. Bring all to temp and serve in many many ways! This is wonderful over rice, greens, in a wrap, or simply on its own!
