My husband invented this low fat, high fiber recipe. I named it confetti beans because all the vegetables make it so colourful. I serve it over brown rice. It can be made vegetarian by substituting vegetable broth for the chicken broth. You can use other types of salsa, but we recommend one with fruit because it adds a little sweetness to the dish.

Heat olive oil in saucepan over medium-high heat. Add onions, peppers, and celery and saute until cooked but not brown. Add broth, tomato paste, and spices. Simmer until liquid is reduced by half (about 10 minutes). Add black beans and salsa, and simmer for another 5-10 minutes. Serve over brown rice. Makes approximately 4 1-cup servings.
