In a medium saucepan, cook quinoa in water/broth according to package directions.In another pan (sprayed with cooking spray or olive oil mist), saute onions and peppers approximately 5-6 minutes, or until softened. Add beans, salsa, corn and seasonings and stir together. Continue to cook on medium heat until cooked through. Reduce heat to low and keep warm until quinoa is finished cooking.Serve warm with a dollup of greek yogurt or sour cream and top with chopped tomatoes and/or avocados.
