1 cup dried cannellini (white kidney) beans
1 cup dry quinoa
1/8 cup coconut oil
2 Large green bell peppers
3 Large carrots
2 Medium zucchini
1- 12 oz package of grape tomatoes
1/2 cup sun-dried tomatoes (the dry kind- not packed in oil)
1 cup Tomato Basil Marinara
6 cloves of garlic
10-12 leaves fresh basil
10 sprigs fresh parsley
1 sprig fresh rosemary
1 Tbsp dried oregano
White and black pepper to taste

Here is how you make White Beans and Quinoa:

Soak the beans overnight in about 3 cups waterAfter soaking, rinse beans and boil in new water (about 3 cups), for 10 minutes.After boiling, reduce heat and cook for 45 more minutes.After 45 minutes, add 1 cup dried quinoa, and continue to cook on medium for 20 minutes. At this point, beans and quinoa mixture should be just slightly moist (not soupy, not dry). If it looks dry, add a little water. If there is a lot of water, remove some before adding the other ingredients.While beans are cooking, julienne carrots, peppers, and zucchini. Set aside.Melt coconut oil over medium heat. Add garlic, chopped fresh herbs (see ingredients list), and julienned peppers. Cover and simmer over medium heat for about 10 minutes.When the beans/quinoa are cooked and at the desired consistency, remove any extra water (skim off the top). Then, add 1 cup marinara sauce, oil/spice/pepper mixture, carrots, zucchini, grape tomatoes, and sun-dried tomatoes. Stir well. Cover, and cook on low heat for about 30 minutes, or until vegetables are the desired consistency and flavors are well-infused. Final texture should be like a thick stew (hardly any broth) with crisp vegetables. Add white and black pepper to taste. Serving Size:?Makes about 6- 2 cup servings, or 12- 1 cup servings if using as a side dish. Analysis is for 2 cups.
