2 cups diced, peeled if desired) sweet potato
1 1/2 cups cooked white beans, rinsed
1/2 cup brown rice
1/4 tsp grey sea salt or pink rock salt
1/4 cup smooth almond butter
2 cups chopped, trimmed kale
2 tbsp lemon juice
1 tbsp tamari (preferably wheat free)
1 tbsp honey
1 tbsp coarsely grated, peeled ginger root

Here is how you make African Nut Butter Stew:

In large saucepan, cook onion and garlic in 2 tbsp vegetable stock over medium heat to soften, 3 - 5 minutes. Add remaining stock, sweet potato, beans, rice and salt. Raise heat to high; bring to a boil. Reduce heat to low; cover. Simmer, stirring occasionally, 45 minutes. Scoop 1/2 cup cooking liquid from stew into small bowl. Add nut butter. whisk until smooth. Stir into pot with kale. Cover. Simmer 5 minutes until kale is just wilted. Remove from heat. Stir in lemon, tamari, honey and ginger.
