Stir in the paprike, chicken or vegetable broth, and cook on high heat for 1 minute. Add the mushrooms and a pinch of salt to draw out the juices. Lower heat to medium, cover, and cook for about 5 minutes, while you cut the cauliflower into florets. Mix in the florets and simmer until the cauliflower is tender but still firm, about 5 to 7 minutes. Remove the pan from the heat and stir in the sour cream. Add salt and pepper to taste. Set the colander on the rim of the pot of boiling water, and with a sturdy wooden spoon, push the batter through the holes into the boiling water. Lower the heat to a simmer and cook the spatzle for about 5 minutes, until firm but light. Remove the spatzle with a mesh strainer or lanrge slotted spoon, and place in a warmed serving dish. Add the butter. Serve immediately.
