Here is how you make Gruyere roulade with red onion and goat cheese:

1. Heat the oven to 200 degrees C / 400 degrees F, and line a 22 x 33 cm / 9 x 13 inch Swiss roll tin with nonstick baking paper. 2. Butter the paper lightly and sprinkle with grated Parmesan 3. Put the curd cheese into a bowl with the grated Gruyere, egg yolks, cream and a little salt and pepper to taste and mix well. 4. In a clean (and larger) bowl, whisk the egg whites until they stand in soft peaks. 5. Stir a large spoonful of eff white into the cheese mixture, then gently pour the cheese mixture over the remaining eff whites and, using a metal spoon, gently fold the two mixtures together until evenly combined. 6. Pour the mixture into the prepared tin, spreading it gently to the edges. 7. Bake for 12-15 minutes, until firm to the touch. When ready, take the roulade out of the oven, cover with a damp tea towel and leave until completely cold.It will shrink a bit - that's normal. 8. While the roulade is cooking, make the filling. Heat the oil and butter in a large saucepan, then add the onions. 9. Stir, cover and leave the onions to cook over a gentle heat for 30 minutes, until they are completely tender and sweet. Stir them from time to time and don't let themburn. Then remove them from the heat and add salt, pepper and a squeeze of lemon juice to taste. 10. To assemble the roulade, sprinkle a piece of cling film (larger than the baking pan) with grated Parmesan. 11. Remove the tea towel from the roulade; turn the roulade on the cling film and peel the nonstick paper off the roulade. 12. Drain off and reserce any liquid from the onions. 13. Beat the goat cheese with a fork to make it smooth and creamy, adding some of the reserved onion liquid (or water) if necessary to give a spreading consistency. 14. Spread the goat cheese all over the roulade. 15. Put the onions on top of the goat cheese and spread to within about 1 cm of the edges. 16. Starting with one of the long edges, roll up the roulade like a Swiss roll, using the cling film to help. 17. To serve cold, chill until needed then serve in slices.
