2 cups whole milk
3/4 cup Irish stout
2 cups (8 oz) shredded sharp Cheddar Cheese
2 cups (8 oz) shredded Dubliner Cheese
8 cups steamed cauliflower, broken into macaroni-sized pieces

Preheat oven to 375 degrees. Spray 4-quart shallow baking dish with nonstick cooking spray. Place garlic on 10-inch piece of foil; drizzle with oil and crimp shut. Place on small baking sheet; bake 30 minutes or until tender. Cool 15 minutes; squeeze cloves into small bowl. Mash into smooth paste.Microwave 2 tbsp butter in medium bowl until melted. Stir in panko and 1/4 tsp salt until well blended.Melt remaining 4 tbsp butter in large saucepan over medium heat. Add flour; cook and stir until light brown. Stir in roasted garlic paste, remaining 1 tsp salt and pepper. Slowly whisk in milk and stout. Simmer until thickened, whisking constantly. Remove from heat; whisk in cheeses, 1/2 cup at a time, until melted. Combine cheese mixture and cauliflower in large bowl. Transfer to prepared baking dish; sprinkle with panko mixture.
